How to ‘eat locally’ in winter
- As the season changes, take care where your food comes from - and consider buying frozen - for a healthy, mostly local diet.
I’m calling shenanigans on this graphic. How exactly would broccoli lose 50% of it’s fiber content through the transit process? Fiber isn’t really something that would degrade in such a relatively short time.
The image shows the USDA as a source, but the article does not link to the source or provide any further details.
This study (pdf alert) performed at UC Davis concludes there is generally no appreciable fiber difference resulting from the ways vegetables are processed and stored unless there is some sort of physical separation of the vegetable components during that process.
Yeah, it’s also not ‘flash frozen minutes after picking’. It’s got to be pulled off the plant, put on a wagon, driven to a processing center, dumped off, cleaned, then frozen. That takes a few days, too.
